Lentil soup with vegetables (Adas b hamoud)

Ingredients
- 1 bunch of swiss chard chopped in small pieces
- 1/2 bunch of coriander finely chopped
- 5 garlic gloves finely chopped
- 2 onions chopped in small pieces
- 2 medium potatoes cut into small squares
- 1.5 cups of brown lentil
- 2 TBSP olive oil
- 1.5 lemon freshly squeezed
- Salt and pepper
Preparation
- In a large pot over high heat, preheat the oil and add the onions, stir until onions begin to lose their bright white color.
- Add the garlic and coriander to the cooked onions and stir for 3 minutes. Then add the potatoes and cook for another 2 minutes.
- In the same pot, add the swiss chard, lentil and 3 to 4 cups of water and stir well. Bring to boil and reduce to medium heat .
- Simmer, uncovered, until lentils are tender for about 30 minutes.
- Add the lemon juice, salt and pepper and let it cook for another 5-10 minutes.
