Ingredients
- 1/3 chopped pistachios
- For the caramel dates:
- 1 1/2 cup pitted dates CEDAR
- 1/3 cup maple syrup
- 3 tbsp small butter cubes
- For the brownie:
- 1 cup orange juice
- 1 cup pitted dates
- 100 g of dark chocolate cut in small pieces
- 1/2 cup softened butter
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp cacao
- 1/2 cup all purpose flour
- 1 tsp baking powder
Preparation
- Preheat the oven to 180 C
- In a saucepan, add the dates and maple syrup. Bring to a boil, then simmer for 2 to 3 minutes
- Transfer the preparation to the container of the electric mixer. Mix until smooth. Add in a few cubes of cold butter at a time and mix until homogeneous. Set aside
- For the brownie:
- In a saucepan, place the orange juice and dates. Cover and heat for 5 to 8 minutes over low heat, stirring occasionally, until compote is obtained
- Transfer the compote to the container of the cleaned electric mixer and mix until a puree is obtained
- In a water bath, melt the chocolate with the butter
- Using the electric mixer, whisk the eggs with the date puree, vanilla, cocoa, flour and baking powder in a large bowl until a creamy preparation is obtained. Gradually stir in the melted chocolate and whisk until homogeneous
- Butter a 20 cm mold, then pour half of the dough into it
- Bake for 7 minutes. Remove from oven and let cool
