Pistachio- crusted salmon

Ingredients
- 160 ml (2/3 cup) of chopped pistachios
- 20 ml (4 teaspoons) of lemon zest
- 20 ml (4 teaspoons) of chopped fresh parsley
- 20 ml (4 teaspoons) of maple syrup
- Salt and ground pepper for taste
- 30 ml (2 tablespoons) of dijon mustard
- 4 salmon fillets, 150g (1/3lb) each with skin
Preparation
- Preheat the oven to 190C (375F)
- In a bowl, combine the pistachios with the lemon zest, parsley and half the maple syrup. Season with salt and pepper.
- In another bowl, combine the remaining syrup with the mustard
- Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Brush the top of the mustard mixture with a brush. Cover with the pistachio mixture.
- Bake for 15 to 20 minutes.
