Pistachio- crusted salmon

Ingredients

  • 160 ml (2/3 cup) of chopped pistachios
  • 20 ml (4 teaspoons) of lemon zest
  • 20 ml (4 teaspoons) of chopped fresh parsley
  • 20 ml (4 teaspoons) of maple syrup
  • Salt and ground pepper for taste
  • 30 ml (2 tablespoons) of dijon mustard
  • 4 salmon fillets, 150g (1/3lb) each with skin

Preparation

  1. Preheat the oven to 190C (375F)
  2. In a bowl, combine the pistachios with the lemon zest, parsley and half the maple syrup. Season with salt and pepper.
  3. In another bowl, combine the remaining syrup with the mustard
  4. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Brush the top of the mustard mixture with a brush. Cover with the pistachio mixture.
  5. Bake for 15 to 20 minutes.
